Instructions
To prepare Lauki Bharta, begin by peeling and grating the lauki. Set it aside. In a pan, heat some oil and add cumin seeds, allowing them to sizzle for about 15 seconds. Next, introduce the ginger garlic paste and sauté for a minute. Add the chopped onion and cook until it becomes soft. Once the onion is tender, incorporate the diced tomatoes, cooking until they break down and soften. Stir in red chili powder and salt, cooking for another 30 seconds.
Now, add the grated lauki to the mixture and combine well. Cover the pan and let the lauki cook on medium heat, adding a bit of water and salt as needed. Allow it to simmer until fully cooked. Finally, stir in the garam masala and let it cook for an additional 3 to 4 minutes. Check the seasoning and adjust if necessary. Once done, turn off the heat and mix in fresh coriander and a pinch of sugar.
