Instructions

Making the Besan Tikkis

  1. Prepare the Mixture: In a mixing bowl, combine the gram flour (besan), poppy seeds, finely chopped green chillies, anardana powder, chopped coriander leaves, red chilli powder, turmeric powder, salt, cumin seeds, and 2 teaspoons of sunflower oil.

  2. Knead the Dough: Gradually add a little water at a time, kneading the mixture until it forms a firm dough. Ensure you do not add too much water; the dough should be pliable yet firm.

  3. Shape the Tikkis: Divide the dough into small, lemon-sized balls. Flatten each ball gently between your palms to form small tikkis or patties.

  4. Boil the Tikkis: In a saucepan, bring enough water to a boil. Carefully add the shaped tikkis into the boiling water and let them simmer for about 2-3 minutes. This step helps to cook them slightly and ensures they hold their shape while frying.

  5. Cool and Fry: After boiling, remove the tikkis from the water, drain, and allow them to cool to room temperature. In a kadai (wok), heat enough sunflower oil for deep frying. Once the oil is hot, gently add the tikkis and fry them until they turn golden brown and are cooked through. Remove them from the oil and drain on absorbent paper.

Preparing the Gravy

  1. Sauté Onions: In a pressure cooker, heat 1-1/2 tablespoons of sunflower oil over medium flame. Add the finely chopped onions and sauté until they turn golden brown.

  2. Add Spices and Tomatoes: Stir in the turmeric powder, chopped tomatoes, coriander powder, garam masala, red chilli powder, salt, and kasuri methi. Mix well to combine all the ingredients.

  3. Pressure Cook: Pour in a little water to create a gravy-like consistency, then mix thoroughly. Close the lid of the pressure cooker and cook for about 3 whistles. After the whistles, reduce the heat and let it simmer for an additional 2 minutes.

  4. Release Pressure: Turn off the heat and allow the pressure to release naturally. Once safe to open, check the gravy for thickness and spice levels, adjusting as needed.

  5. Combine Tikkis with Gravy: Gently add the fried besan tikkis into the prepared tomato gravy. Allow them to soak in the gravy for about 5 minutes, which helps the tikkis absorb the flavors.

  6. Garnish and Serve: Turn off the flame and garnish with freshly chopped coriander leaves.
