Begin by melting the butter and allowing it to cool slightly. While it cools, prepare your dry ingredients. In a large bowl, sift together the all-purpose flour and baking powder. Add the sugar and a pinch of salt, then finely grate the zest of one lemon, being careful to only grate the yellow part. Slice the vanilla bean lengthwise and scrape out the seeds, adding them to the bowl as well. Set the dry ingredients aside.

In a separate jug or bowl, combine the liquid ingredients: the milk and the eggs. Whisk them together gently until well blended.

Now, with an electric hand mixer on its lowest setting, slowly begin to incorporate the wet mixture into the dry ingredients. Gradually add the wet mixture bit by bit, allowing it to combine thoroughly without overmixing. The result should be a smooth, slightly thick batter.

Using an ice cream scoop or two spoons, carefully portion out approximately 90 grams of batter into each of the 12 muffin cups. These should be placed in a muffin tray lined with paper liners.

Bake the muffins in a preheated oven at 180°C (350°F) in static mode for about 35 minutes, or until a toothpick inserted into the center comes out clean and the muffins have a golden-brown top.
