  3. Make the batter: In a large bowl, combine the whole milk, eggs, brown sugar, lemon zest, and orange zest. Whisk everything together until smooth and well combined.

  4. Add the dry ingredients: In the same bowl, add the all-purpose flour, rice flour, and baking powder. Stir until you achieve a lump-free batter.

  5. Incorporate the apple puree and chunks: Mix in the apple puree and the chopped apple slices to the batter. Stir gently to ensure an even distribution of apples.

  6. Cook the pancakes: Heat a non-stick pan or griddle over medium heat and add about 20g of butter to grease the surface. Once melted, pour a small amount of batter into the pan to form a pancake.
