Description
Dosas are a beloved South Indian breakfast dish, typically made with a fermented rice and lentil batter. However, some varieties can be prepared instantly. The Aval Dosa, or Poha Dosa, is a perfect quick option for a busy weekday breakfast or dinner. Made with flattened rice, it is soft, flavorful, and easy to prepare. You can keep it plain or add a dash of flavor with onions, green chilies, and coriander. Cooking it in the form of an Uttapam gives this dosa its special texture.

Ingredients
- 1 cup Rice (raw)
- 1/4 cup White Urad Dal (Whole)
- 1 cup Poha (Flattened rice)
- 3/4 cup Curd (Dahi / Yogurt)
- Salt, to taste
- Water, as required
- Oil or Ghee for cooking

Instructions
- Soak the Ingredients: Rinse the raw rice and urad dal separately in water. Soak them in enough water for 4 hours. Soak the poha in 3/4 cup of yogurt for about 45 minutes.
- Grind the Batter: Once the rice and urad dal are soaked well, grind the rice with a little water and the soaked poha with curd into a smooth, thick batter. Pour this mixture into a large bowl.
- Grind the Urad Dal: Grind the urad dal with just enough water to make a smooth, thick batter, and add it to the rice and poha mixture. Add 1-1/2 teaspoons of salt and mix well.
- Ferment the Batter: Cover the bowl and allow the batter to ferment in a warm place for 6-8 hours or overnight. Once fermented, stir the batter before using. You can refrigerate the batter for up to 3-4 days.
- Cook the Dosa: Preheat a greased skillet over medium heat. Pour a ladleful of batter in the center and spread it into a thick pancake or a thin crepe. If making a thin dosa, be careful as it can tear easily due to its soft texture. Drizzle a teaspoon of oil or ghee around the edges and center of the dosa. Cover the skillet with a lid and cook for 40 seconds to 1 minute until lightly golden brown.
- Serve: Carefully lift the dosa off the pan and serve hot. Continue the same process for the remaining dosas.
- Serving Suggestions: Serve the Aval Dosa with a spicy onion tomato chutney for a delightful breakfast or quick dinner.
