Ingredients:
- 1 cup Sooji (Semolina/Rava)
- 1 cup Desiccated Coconut
- 3/4 cup Vivatta Maida (All-purpose Flour)
- 1/2 cup Sugar
- 2 Whole Eggs
- 1 teaspoon Vanilla Extract
- 1/2 cup Curd (Dahi / Yogurt), or Milk
- 1/2 cup Butter (Salted), melted
For the Sugar Syrup:
- 1 cup Sugar
- 1 cup Water
- 1 teaspoon Lemon juice
- 1 teaspoon Rose water
Preparation Time: 15 minutes
Cooking Time: 75 minutes
Instructions:
- Preheat the oven to 200°C and grease a square baking tray with butter.
- In a mixing bowl, combine semolina, desiccated coconut, and flour.
- Add the wet ingredients: eggs, melted butter, curd (or milk), and vanilla extract. Mix well and set the mixture aside to rest for 15 minutes.
- After the resting time, transfer the mixture into the prepared baking tray and spread it evenly.
- Bake the mixture at 180°C for about 40 minutes or until the top turns golden brown.
- Meanwhile, prepare the sugar syrup. In a saucepan, combine sugar, water, lemon juice, and rose water. Bring the mixture to a boil and then simmer for an additional 5 minutes to reach a one-string consistency. Remove from heat and set aside.
- Once the cake is baked, remove it from the oven. Run a knife along the edges and cut it into your desired shapes. Pour the prepared sugar syrup evenly over the cake.
- Return the cake to the oven and bake for an additional 15 minutes to allow the syrup to soak in.
- Remove from the oven and let it cool for 20 minutes. Serve warm, or chill for later.
