Instructions

  1. Prepare the Dough:

    • In a large mixing bowl, combine the whole wheat flour, all-purpose flour, and salt. Mix briefly to combine.
    • In a separate large measuring cup, whisk together 1 cup of buttermilk, honey (or jaggery/sugar), and melted butter.
    • Sprinkle the active dry yeast over the lukewarm water and let it sit for 3-4 minutes until it becomes frothy.
    • Add the frothy yeast mixture to the buttermilk mixture and stir to combine.
    • Gradually add the buttermilk mixture to the flour mixture (either by hand or using a stand mixer or food processor). If needed, add a little more water to form a soft dough. Knead the dough for 8-10 minutes on a floured surface or using the stand mixer with the dough hook until it is smooth and elastic.
    • Transfer the dough to a lightly greased bowl, turning it to coat it in oil. Cover with a damp kitchen towel or plastic wrap and let it rise in a warm place for 1 to 1.5 hours, or until it has doubled in size.
  2. Prepare the Filling:

    • While the dough is rising, prepare the cinnamon filling by mixing together the melted butter, cinnamon powder, caster sugar, and brown sugar in a small bowl.
  3. Shape the Rolls:

    • Once the dough has doubled in size, punch it down and divide it into two equal portions.
    • On a lightly floured surface, gently roll each portion of dough into a rectangle about 12 inches long and 8 inches wide.
    • Spread half of the cinnamon filling evenly over each rectangle of dough.
    • Starting from the longer edge, tightly roll the dough into a log. Use a sharp knife to slice each log into 1-inch thick rounds.
    • Place the rounds on a greased or parchment-lined baking tray, with the cut sides facing down. Arrange them so they are close together but not touching.
  4. Second Rise:

    • Cover the tray with a damp kitchen towel and let the rolls rise again for 30 minutes in a warm place.
  5. Preheat the Oven:

    • While the rolls are rising, preheat your oven to 200°C (about 400°F).
  6. Bake the Rolls:

    • After the second rise, bake the rolls in the preheated oven for 15-20 minutes, or until golden brown and cooked through.
    • Remove the rolls from the oven and allow them to cool on a wire rack for 5-10 minutes.
  7. Prepare the Glaze:

    • In a small bowl, whisk together the buttermilk and icing sugar until smooth. Add more buttermilk as necessary to achieve a thick but pourable consistency.
  8. Glaze the Rolls:

    • Drizzle the glaze generously over the warm cinnamon rolls using a spoon or small piping bag.

Serving Suggestions

These Buttermilk Cinnamon Rolls are perfect with a cup of Beet Latte or a refreshing glass of Homemade Pomegranate Juice with Ginger. They make an excellent breakfast treat, an afternoon snack, or even a dessert for gatherings.

Pro Tips:

  • For an extra rich flavor, you can substitute some of the butter with cream cheese in the glaze.
  • If you prefer a less sweet roll, reduce the amount of sugar in the filling and glaze to suit your taste.
  • These rolls can be prepared the night before: Simply shape the rolls, place them in the baking tray, and cover them tightly with plastic wrap. Refrigerate overnight and bake them in the morning for fresh cinnamon rolls.

Enjoy these melt-in-your-mouth buttermilk cinnamon rolls as a comforting and delightful treat, guaranteed to brighten up your day!
