Ingredients:

  • 6 cups flour
  • 1 packet active dry yeast

  • 2 cups water
  • 1/2 cup boiling water
  • 6 eggs, hard-boiled and sliced
  • 2 green onions, finely chopped
  • 3 tablespoons light soy sauce
  • 6 tablespoons brown sugar
  • 4 tablespoons oyster sauce
  • 4 tablespoons cornstarch, dissolved in water
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder

Instructions:

  1. Prepare the Dough:

    • In a medium bowl, mix flour, salt, and baking powder. Set aside.
    • Dissolve yeast in lukewarm water in another bowl, then add 1 cup of the flour mixture. Mix thoroughly.
    • Cover with a cloth and let rise for 1 hour.
    • Dissolve white sugar in boiling water, then let cool to lukewarm. Pour into the yeast mixture.
    • Add the rest of the prepared flour mixture and stir to blend well.
  2. Knead and Rise:

    • Grease a large bowl. Turn the dough out onto a floured board and knead for 3 minutes until smooth.
    • Place the dough ball into the greased bowl, turn it once, and cover with a damp cloth.
    • Let it rise for 2 hours or until doubled in size.
  3. Prepare the Filling:

    • Meanwhile, sautรฉ garlic and onions in a small amount of oil in a wok.
    • Add chopped chicken thigh and stir-fry until no longer pink.
    • Add soy sauce, oyster sauce, and brown sugar. Pour in the dissolved cornstarch and stir-fry quickly until the meat is glazed well. Remove from heat and let cool.
  4. Assemble the Siopao:

    • Punch down the risen dough and knead on a floured board for 3 to 5 minutes.
    • Divide the dough and roll each half into a 12×2 inch log. Cut each log into 12 pieces, making 24 in total.
    • Roll each piece into a ball, then flatten it into a 3-inch diameter circle. Dust with flour if needed.
    • Place a slice of hard-boiled egg and a tablespoon of filling onto each dough round. Gather the sides of the dough, pinch together, and twist.
    • Place the pinched side down on parchment paper and transfer to a steamer.
  5. Steam the Siopao:

    • Cover the assembled Siopao with a damp cloth and let rise for 1 hour.
    • Steam the Siopao for 20 minutes until fully cooked and fluffy.
