Yield: 64 Rolls

Ingredients:

Quantity Ingredient
1 Active Dry Yeast
1 1/2 Warm Water
5 Sugar
1/2 Salt
1 1/2 Shortening
1/2 Eggs
2 Butter (melted)
1/2 Flour
1 1/4 Flour (for sifting)

Instructions:

  1. Activate the Yeast:

    • Begin by combining the active dry yeast and warm water in a two-cup liquid measuring cup. Allow the mixture to stand for about 5 minutes until the yeast activates and becomes frothy.
  2. Mix Dry Ingredients:

    • In a large bowl, sift together 4 cups of flour, sugar, and salt.
  3. Incorporate Wet Ingredients:

    • Stir in the activated yeast mixture along with the shortening until well combined.
  4. Add Eggs and Remaining Flour:

    • Gradually add the eggs and remaining 1 cup of flour to the mixture. Stir vigorously until a soft and slightly sticky dough forms.
  5. First Rise:

    • The dough should be soft and sticky. Brush the surface of the dough with some of the melted butter and cover loosely. Allow the dough to rise in a warm place for approximately 1 1/2 hours or until it has doubled in bulk.
  6. Prepare Cake Pans:

    • Meanwhile, grease four 8-inch round cake pans and set them aside.
  7. Prepare Work Surface:

    • Sift a layer of 3/4 cup of flour evenly over a clean work surface.
  8. Shape the Rolls:

    • Turn the risen dough out onto the floured surface. Sprinkle another 1/2 cup of flour evenly over the dough.
    • Roll the dough out to a thickness of about 1/2 inch, ensuring to brush off any excess flour.
  9. Cut and Fold:

    • Using a floured 2-inch biscuit cutter, cut out rounds of dough.
    • Take each round and pull it into an oval shape, approximately 2 1/2 inches long.
    • Dip one side of each oval into the melted butter and then fold it in half, ensuring the buttered side is facing outwards.
  10. Arrange in Pans:

    • For each cake pan, place the folded side of 10 rolls against the side of the pan, gently pressing the center fronts of the rolls together to seal.
    • Arrange 5 rolls in an inner circle and place 1 roll in the center, resulting in a total of 16 rolls per pan.
  11. Second Rise:

    • Cover the pans loosely and allow the rolls to rise in a warm place for approximately 1 hour, or until they have doubled in size.
  12. Preheat and Bake:

    • Preheat your oven to 400°F (200°C).
    • Once the rolls have risen, bake them uncovered in the preheated oven for 12 to 15 minutes, or until they are lightly golden brown in color.
  13. Serve and Enjoy:

    • Remove the rolls from the oven and let them cool slightly before serving. Enjoy the warm, freshly baked goodness of Sister Schubert’s Parker House Rolls with your favorite meals or as a delightful snack on their own!

Note: These rolls are best enjoyed fresh out of the oven, but they can also be stored in an airtight container at room temperature for up to a few days. Simply reheat them in the oven or microwave before serving to enjoy their softness and flavor once again.
