  • Total Time: 20 minutes
  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Servings: 10
  • Yield: 20 crepes

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup water
  • 2 cups milk
  • 1/2 cup butter
  • 3 large eggs
  • 2 pinches of salt

Instructions:

  1. Blend the Ingredients:

    • In a blender, combine the all-purpose flour, water, milk, eggs, butter, and salt.
    • Blend for about 5 seconds until the mixture is smooth and well combined.
  2. Scrape and Rest:

    • Turn off the blender and scrape down the sides with a rubber spatula to ensure all ingredients are fully incorporated.
    • Transfer the batter into a bowl and cover it. Let the batter stand for 1 hour to allow the flavors to meld together.
    • Alternatively, you can prepare the batter up to one day in advance and refrigerate it until ready to use.
  3. Prepare the Pan:

    • Heat a 7-8 inch crepe or non-stick skillet over moderate heat until it’s hot but not smoking. Remove from heat.
    • Brush the pan with butter to prevent sticking.
  4. Cook the Crepes:

    • Stir the batter, then fill a 1/4 cup measure halfway with the batter.
    • Pour the batter into the center of the pan, then quickly tilt and rotate the pan to spread the batter thinly and evenly across the bottom.
    • Return any excess batter to the bowl.
    • Return the pan to the heat and cook the crepe until the underside is lightly browned.
    • Use a spatula to loosen the edges of the crepe, then carefully flip it over and cook the other side until lightly browned.
    • Transfer the cooked crepe to a plate and repeat the process with the remaining batter.
  5. Serve or Store:

    • Serve the crepes warm with your favorite toppings such as fresh fruits, whipped cream, Nutella, or maple syrup.
    • If not serving immediately, you can stack the crepes, wrap them in plastic wrap, and store them refrigerated for up to 3 days or frozen for longer storage.
