Korean Egg Roll (Telur Dadar Gulung)

This delightful Korean Egg Roll, known as “Telur Dadar Gulung” in Indonesian, is a simple and versatile dish that brings together eggs and vegetables in a perfectly rolled, fluffy omelette. The balance of flavors from the vegetables and the light seasoning makes this dish a go-to for quick meals or as a side dish in your lunchbox. Customize it with your favorite veggies or spice it up with some green chilies for an extra kick. Let’s dive into the recipe!

Ingredients

Ingredient Quantity
Eggs 4 large
Green chilies (optional) 5 (finely chopped)
Carrot 1 medium (diced)
Cabbage As needed (shredded)
Ground pepper To taste
Salt To taste
MSG or bouillon powder (optional) To taste

Instructions

  1. Prepare the Vegetables
Start by finely dicing the carrot and shredding the cabbage. If you enjoy a little heat, finely chop the green chilies as well. Lightly sauté the vegetables in a pan for a minute or two. (You can skip this step if you prefer your vegetables raw, but sautéing enhances the flavors).

  2. Combine with Eggs
Crack the eggs into a bowl and whisk them well. Add the sautéed vegetables to the eggs, and season with ground pepper, salt, and a little bit of MSG or bouillon powder if you like. Stir until everything is evenly combined.

  3. Heat the Pan
Heat a non-stick frying pan over medium heat. Add a small amount of oil and let it warm up.

  4. Cook in Layers
Pour a thin layer of the egg mixture into the pan, making sure it spreads evenly across the surface. Let it cook until the top is about 1/3 done and still slightly runny. Carefully roll the egg towards one side of the pan. Push the rolled egg to the edge, leaving space in the pan for the next layer.

  5. Repeat Layering
Add another thin layer of the egg mixture to the empty side of the pan. Once it reaches the same doneness as the previous layer, roll the first egg layer into the new one. Continue this process until all the egg mixture is used, typically resulting in 3-4 layers.

  6. Slice and Serve
Once fully cooked, remove the rolled omelette from the pan. Let it cool for a minute before slicing it into bite-sized pieces. Serve hot and enjoy your Korean Egg Roll!

Tips:

  • You can experiment with the filling by adding other vegetables like bell peppers, spinach, or even cheese.
  • If you want a richer flavor, you can add a splash of milk or cream to the egg mixture.

This Korean-inspired egg roll is perfect for a quick breakfast, lunchbox treat, or a side dish at dinner. Its delicate layers and vibrant colors make it as pleasing to the eye as it is to the palate.
