Instructions

  1. Preheat and Prepare the Butter: Begin by gently melting 30g of butter over low heat. Once melted, set it aside to cool slightly.

  2. Mix the Wet Ingredients: In a large mixing bowl, combine the sugar and eggs. Use an electric mixer (or a stand mixer if preferred) and beat the mixture for a few minutes until it becomes light, fluffy, and pale in color.

  3. Add the Dry Ingredients: Lower the mixer speed and gradually add the flour, a little at a time, to avoid lumps. After the flour, mix in the baking powder until combined.

  4. Incorporate the Melted Butter: Slowly add the previously melted butter into the mixture, continuing to mix on low speed until fully incorporated.

  5. Add the Milk: Next, pour the milk into the batter slowly, continuing to mix gently until the batter becomes smooth and well-combined.

  6. Prepare the Baking Molds: Grease mini loaf pans (each one should be about 6×9 cm in size). Then, using a ladle, carefully pour the batter into each mold, filling each about three-quarters full.

  7. Add a Decorative Touch: For a classic touch, use a knife to create a small slit down the center of each mini plumcake. This will allow them to bake evenly and give a nice finish once they are baked.

  8. Bake: Place the filled molds in a preheated oven at 180°C (350°F) and bake for about 25-30 minutes, or until the cakes are golden brown and a toothpick inserted into the center comes out clean.
