Instructions

  1. Prepare the Batter
    In a large mixing bowl, crack the eggs and add the whole milk at room temperature. Whisk together until the mixture is smooth and free of lumps. Next, gradually add the oat flour to the egg-milk mixture, stirring continuously until you have a smooth, runny batter.

  2. Heat the Pan
    Lightly grease a crepe pan or a non-stick skillet with butter. Heat the pan over medium-low heat until itโ€™s warm, but not too hot.

  3. Cook the Crepes
    Pour about half a ladle of the batter into the pan, tilting it gently to spread the batter evenly across the surface. Let it cook for around 1 minute, or until the edges start to lift away from the pan. The crepe should easily release from the bottom of the pan when it’s ready to flip.

  4. Flip and Continue Cooking
    Once the crepe is cooked on one side, use a spatula to carefully flip it and cook for another 30 seconds to 1 minute on the other side until golden brown.

  5. Stack the Crepes
    As each crepe is cooked, place it on a plate and stack it on top of the previous one to keep them warm.
