Phulka (Roti) Recipe
Description:
Phulka, also known as roti or chapati, is a staple in Indian households, made with wheat flour. It’s commonly served with a variety of vegetables and is a key part of every meal in North India.

Ingredients:
- 1 cup wheat flour
- 1/2 teaspoon salt
- 1 teaspoon oil (optional)
- Ghee (for serving)

Instructions:
- In a mixing bowl, combine wheat flour and salt. Mix well.
- Gradually add water, kneading the mixture to form a soft dough.
- Once the dough comes together, add oil (if using) and knead again until smooth and soft.
- Cover the dough and set aside for 15 minutes to rest.
- After resting, divide the dough into small balls.
- Roll each ball into a round shape using a rolling pin. Dust with dry flour as needed to prevent sticking. Roll the roti to the desired size.
- Heat a tawa (griddle) over medium heat. Place the rolled roti onto the hot tawa.
- After a few seconds, small pockets will form on the surface of the roti. Flip it to cook the other side.
- Once both sides are lightly browned, remove the tawa and place the roti directly on an open flame using tongs, allowing it to puff up.
- Once fully puffed and golden, remove from the flame, and apply ghee generously on top.
- Serve the freshly made phulkas with a side of Jaipuri Aloo Pyaaz Sabzi and Palak Raita for a delicious lunch. Alternatively, pair with any vegetable curry of your choice.
