Overview:

Don’t let the name fool you, this pie does not have a meringue on top…it’s mixed in with the sweet potato mixture and makes the filling light in texture. It’s delicious! Prep and cook time does not include chilling time.

Sugar 3/4 cup
Plain gelatin 1 packet
Milk 3 cups
Salt 3/4 teaspoon
Ground cinnamon 1/4 teaspoon
Ground nutmeg 1/2 teaspoon
Mashed sweet potatoes 1/2 cup
Sugar 1 1/4 cups
Egg yolks 3

Instructions:

  1. In a saucepan, combine sugar, gelatin, salt, egg yolks, and milk.

  2. Cook over medium heat, stirring constantly until the mixture comes to a boil.

  3. Remove the mixture from heat and stir in mashed sweet potatoes, ground cinnamon, and ground nutmeg. Let the mixture chill until it thickens slightly.

  4. In a separate bowl, beat egg whites until soft peaks form.

  5. Gradually add 1 1/4 cups of sugar to the beaten egg whites, continuing to beat until stiff peaks form.

  6. Gently fold the sweet potato mixture into the beaten egg whites until well combined.

  7. Pour the filling into the baked pie shell(s), spreading it evenly.

  8. Chill the pie(s) in the refrigerator until firm, for at least a few hours or overnight.

  9. Before serving, top the pie(s) with whipped topping if desired.

Recipe Notes:

  • For a quicker setting time, you can place the pie(s) in the freezer for about an hour.
  • Garnish with a sprinkle of ground cinnamon or nutmeg for extra flavor and presentation.
  • Ensure that the pie shell(s) are fully cooled before pouring in the filling to prevent them from becoming soggy.
  • This pie is best served chilled, straight from the refrigerator.
  • Experiment with different variations of spices such as ginger or cloves for a unique flavor profile.
  • Leftovers can be stored covered in the refrigerator for up to 3 days.

Enjoy this delightful Sweet Potato Chiffon Pie as a satisfying dessert or treat for any occasion!
