Fragrant Indonesian Ayam Ungkep Recipe

Ingredients:

  • 1 kg chicken, cut into pieces
  • 5 cloves garlic
  • 4 shallots
  • 3 inches fresh turmeric
  • 1/4 inch ginger
  • 1 stalk lemongrass, bruised
  • 3 bay leaves
  • Coriander powder
  • Salt, to taste
  • Water
  • Cooking oil

Instructions:

  1. Prepare the Spice Paste: In a blender or mortar, grind together garlic, shallots, fresh turmeric, ginger, and a pinch of coriander powder until smooth.
