Fragrant Indonesian Ayam Ungkep Recipe

Ingredients:

  • 1 kg chicken, cut into pieces
  • 5 cloves garlic
  • 4 shallots
  • 3 inches fresh turmeric
  • 1/4 inch ginger
  • 1 stalk lemongrass, bruised
  • 3 bay leaves
  • Coriander powder
  • Salt, to taste
  • Water
  • Cooking oil

Instructions:

  1. Prepare the Spice Paste: In a blender or mortar, grind together garlic, shallots, fresh turmeric, ginger, and a pinch of coriander powder until smooth.

  2. Sauté the Spice Paste: Heat a little cooking oil in a pan over medium heat. Sauté the spice paste until fragrant.

  3. Cook the Chicken: Add the chicken pieces to the pan. Stir and cook until the chicken changes color.

  4. Add Seasonings: Pour in enough water to cover the chicken. Add bay leaves, bruised lemongrass, and salt to taste. Bring to a boil and let it simmer until the chicken is tender and the flavors have infused, about 30-40 minutes.

  5. Fry the Chicken: In a separate pan, heat cooking oil for frying. Fry the chicken pieces until they turn golden brown and crispy.

  6. Serve: Arrange the fried chicken on a serving platter. Optionally, garnish with fresh herbs like cilantro or parsley. Serve hot with steamed rice or your favorite side dishes.
