Lemon Juice 1 lemon
Water 500ml
Sugar 600g
Anise Seeds 5g
Rose Water 4 tbsp

Instructions

  1. Select the Roses
    Begin by picking fully bloomed roses that are still fresh and fragrant, as their aroma is the essence of this jelly. Opt for roses in shades of red or pink, as they have a rich fragrance and texture perfect for this recipe.

  2. Prepare the Petals
    Gently pluck the rose petals, removing the base of each petal, and then crush them using a mortar and pestle, along with the anise seeds. This will release the essential oils from the petals, enhancing the flavor of your jelly.

  3. Blend the Mixture
    Transfer the crushed petals and anise seed mixture into a blender. Add half of the sugar to the blender and pulse until everything is well combined and finely ground.

  4. Cook the Jelly
    Pour the blended mixture into a stainless-steel pot. Add the remaining sugar, lemon juice, rose water, and water. Stir everything together and bring it to a boil over medium heat.

  5. Simmer and Skim
    Once boiling, reduce the heat and let it simmer for 25-30 minutes. Stir occasionally and skim off any foam that forms on top. The jelly is ready when a drop placed on a plate holds its shape and doesn’t run.

  6. Preserve the Jelly
    While still hot, pour the jelly into sterilized jars. Seal the jars tightly and let them cool. Store in a cool, dark place and allow the jelly to set for at least one month before consuming to allow the flavors to fully develop.
