Frankenstein Soup: A Fun and Flavorful Twist on Traditional Zuppa

Ingredients:

Spinach 250g
Broccoli 300g
Peas 300g
Carrot 1
Celery 1 stalk
Rice (Venere or Black rice) 200g
Salt To taste
Vegetable Broth As needed

Instructions:

  1. Prepare the Base: Begin by cleaning the carrot and celery. Chop them into large pieces and place them in a large saucepan. Add 1 liter of water and a pinch of salt. Bring the water to a boil.

  2. Cook the Vegetables: While waiting for the water to boil, wash the spinach and remove any tough stems. Once the water is boiling, add the broccoli and let it cook for about 5 minutes. Then, add the spinach and let everything cook for another 15 minutes until all the vegetables are tender. If the water level drops too much during cooking, add a ladle of vegetable broth to maintain the desired consistency.

  3. Blend the Vegetables: After the cooking time is up, remove the large pieces of carrot and celery from the pot. Using an immersion blender or a stand blender, blend the remaining vegetables and broth until you achieve a smooth, velvety cream.

  4. Cook the Rice: In a separate pot, bring salted water to a boil and add the rice. Let it cook until tender. Once ready, drain the rice and set it aside.

  5. Assemble the Soup: Now it’s time for the fun part! Take large glasses (around 190ml in capacity) and use a black marker to draw Frankenstein’s face features. Draw slightly arched eyebrows, eyes, and a mouth to create a spooky yet playful look.

  6. Serve the Soup: Pour the smooth, blended vegetable soup into the prepared glasses. Add a portion of the cooked rice to each glass, giving it a little stir to combine.

Tips:

  • For a more substantial meal, you can top the soup with a drizzle of olive oil or a sprinkle of Parmesan cheese.
  • If you can’t find black rice, you can substitute it with regular white rice, though the dark color of black rice adds a fun twist that resembles Frankenstein’s “hair”!
  • For added texture, serve the soup with crusty bread on the side.
