Description

Known in France as Cote de Porc Vigneronnes (Grape Growers Pork Chops), this provincial dish embodies the simplicity and heartiness of the cuisine enjoyed after a demanding day in the vineyards. Serve alongside wilted spinach in cream for a complete and satisfying meal.

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 6 pork chops
  • 1/2 cup water
  • 1 shallot
  • 1 garlic clove
  • 1 tablespoon Dijon mustard
  • 2 tablespoons chopped fresh Italian parsley
  • 1/4 cup chopped cornichons
  • Salt and pepper to taste

Instructions

Step Description
1 Prepare Skillets: In two heavy large skillets, melt 1 tablespoon of butter with 1 tablespoon of olive oil each over medium heat.
2 Season Chops: Season pork chops with salt and pepper to taste.
3 Sear Chops: Add 3 chops to each skillet and sauté until lightly browned, approximately 3 minutes per side.
4 Cook Covered: Cover the skillets and cook for 9 minutes, or until a thermometer inserted into the center of the chops registers 145°F.
5 Rest Chops: Transfer the cooked chops to a warm platter, tent with foil, and keep them warm.
6 Prepare Sauce: In each skillet, add half of the water, shallot, and garlic. Cook until the shallot is soft, scraping up any browned bits, about 2 minutes.
7 Incorporate Juices: Add any juices from the chops to the skillets.
8 Make Mustard Cornichon Sauce: Whisk in the chopped cornichons and Dijon mustard into each skillet.
9 Season and Serve: Season the sauce with salt and pepper to taste. Pour the sauce over the chops and sprinkle with chopped fresh Italian parsley.
