French Four-Cheese Onion Soup

Category: Soups and Stews
Servings: 4

Ingredients:

Ingredient Quantity
Onions 1 kg
Butter 50 g
Sugar ½ tbsp
Fine salt 1 tsp
Sage To taste
Vegetable broth As needed
White wine 1 glass
Baguette 1 loaf
Langres cheese 20 g
Brie cheese 20 g
Boursault cheese 20 g
Camembert cheese 20 g
Extra virgin olive oil To taste
Black pepper To taste

Instructions:

  1. Prepare the onions: Start by cleaning and peeling the onions. We recommend using a mix of yellow, white, and red onions for depth of flavor. Peel all varieties and set them aside in a bowl.

  2. Cook the onions: Heat a large saucepan over medium heat and melt the butter, infusing it with fresh sage leaves. Once the butter is melted and fragrant, add the onions to the pan.

  3. Caramelize the onions: Increase the heat and season the onions with salt and sugar. Allow the onions to brown slightly, stirring occasionally. Once the onions have softened and developed some color, deglaze the pan with the white wine.

  4. Add the broth: Pour in enough vegetable broth to cover the onions. Bring the soup to a gentle simmer and cook for about 30-40 minutes, allowing the flavors to meld together.

  5. Prepare the baguette: While the soup is simmering, slice the baguette into 1 cm thick slices and arrange them on a baking tray. Toast them in the oven until crispy and golden.

  6. Prepare the cheeses: Slice the Langres, Boursault, Brie, and Camembert cheeses into small pieces or thin slices.

  7. Assemble the soup: Once the onions are tender and the soup has simmered, transfer them to a large baking dish. Layer the toasted baguette slices over the soup, ensuring the bread soaks up some of the liquid.

  8. Add the finishing touches: Top the bread with the slices of cheese, drizzle with a little extra virgin olive oil, and season with black pepper to taste. Garnish with a few sage leaves for added flavor and visual appeal.

  9. Final bake: Place the dish in a preheated oven (about 200°C or 400°F) for 10-15 minutes, or until the cheese is melted and bubbling and the bread has absorbed the flavors of the soup.

  10. Serve and enjoy: Ladle the soup into bowls and serve hot. This rich and comforting French-inspired onion soup with a delightful cheesy topping is perfect for chilly evenings.
