Instructions:

Step 1: Preparing the Tomatoes
Start by washing the cherry tomatoes thoroughly. Cut them in half and sprinkle them with a small amount of sugar and a pinch of fine salt. Add some fresh thyme leaves to enhance their natural flavors. Transfer the seasoned tomatoes onto a baking tray and roast them in a preheated static oven at 220°C (430°F) for approximately 15 minutes. This will bring out their sweetness and intensify their taste.

Step 2: Preparing the Pasta
While the tomatoes are roasting, fill a large pot with salted water and bring it to a boil. Once boiling, add the mini fusilli and cook according to the package instructions, typically for about 8-10 minutes, until the pasta is al dente.

Step 3: Preparing the Mozzarella
While the pasta and tomatoes are cooking, cut the mozzarella balls (ciliegine) in half. Use an immersion blender to mix the mozzarella into a smooth, creamy texture. This will be the base for your delicious Caprese sauce.

Step 4: Assembling the Dish
Once the pasta is ready, drain it, reserving a bit of pasta water. Toss the hot fusilli with a drizzle of extra virgin olive oil and freshly chopped basil leaves for an added layer of flavor. Then, gently mix in the roasted cherry tomatoes, making sure they distribute evenly throughout the pasta.

Step 5: Final Touches
Add the creamy mozzarella sauce prepared earlier, blending everything together. If needed, add a splash of pasta water to help the sauce coat the pasta beautifully. Adjust the seasoning with a little more salt, fresh basil, and extra virgin olive oil to taste.

Step 6: Serving
Serve the Pasta Caprese immediately, garnishing with additional basil leaves and a final drizzle of olive oil. The dish is best enjoyed while it’s still warm, allowing the flavors to come together harmoniously.

Pasta Caprese is a delightful, fresh dish inspired by the classic Italian Caprese salad, but with the comforting texture of pasta. The combination of roasted tomatoes, creamy mozzarella, and fragrant basil makes this dish a true taste of summer, perfect for a light yet satisfying meal. Enjoy the harmony of sweet tomatoes and savory cheese, all brought together with the richness of extra virgin olive oil!
