Yellow Cherry Tomatoes 200g
Mixed Salad Greens 60g
All-Purpose Flour (00) 110g
Rice Flour 35g
Semolina Flour 40g

Seed Oil (for frying) As needed

Preparation:

  1. Clean the Sardines:
    Begin by cleaning the sardines. Remove the head, then make a small incision along the back to open them up. Gently lift out the central bone and carefully remove it, keeping the fish intact. Trim away any excess sides, ensuring the inside is clean.

  2. Prepare the Dough for the Flatbreads:
    In a large mixing bowl, combine the all-purpose flour, semolina flour, and rice flour. Mix thoroughly to combine the different flours, ensuring an even consistency.

  3. Fry the Sardines:
    Once the sardines are cleaned, dredge them lightly in flour. Lay them on a tray lined with paper towels to remove any excess flour and oil. Heat the seed oil in a large frying pan over medium-high heat. Fry the sardines for about 2-3 minutes on each side, or until golden and crispy. Once fried, season with a pinch of salt and set aside to drain any excess oil.

  4. Cook the Flatbreads:
    While the sardines are frying, cook the flatbreads (piadine) in a separate pan. Heat the pan over medium heat, and cook each side of the flatbread for about 2 minutes or until lightly golden and soft. You can use a bit of oil if you prefer extra crispiness.

  5. Assemble the Flatbread:
    To assemble, take each flatbread and place a handful of mixed salad greens on one half. Layer 5-6 fried sardines over the greens, followed by a few yellow cherry tomatoes, halved for freshness and color.

  6. Finish with Burrata:
    Tear the burrata into smaller pieces and scatter them generously over the sardines and tomatoes. The creamy burrata will melt slightly into the warm flatbread, adding richness and depth of flavor.

  7. Fold and Serve:
    Fold the flatbread in half to enclose the delicious filling. Press lightly to compact the ingredients and help the burrata spread. Serve immediately while the flatbread is still warm and enjoy the wonderful combination of textures and flavors!

  • Sardines: Sardines are an excellent source of omega-3 fatty acids and protein, adding a lovely briny depth to this dish. If you can’t find fresh sardines, you can use canned sardines as a substitute.
