Ingredients:
- 1 beef liver
- 1 lamb stew meat

- 1 teaspoon nutmeg
- 1 tablespoon distilled white vinegar
Instructions:

- Place the beef heart in a 4-quart covered pot and cover it with cold water.
- Simmer the beef heart, covered, for 70 minutes.
- After 70 minutes, add the beef liver and lamb stew meat to the pot.
- Cover and simmer for an additional 20 minutes.
- Remove the contents from the pot and allow them to cool.
- Reserve 1 cup of the cooking liquid.

- Once cooled, coarsely grind all the cooked meat and onions.

Mix the Ingredients:
- In a large bowl, combine the ground meat mixture with oatmeal, salt, pepper, thyme, rosemary, nutmeg, and distilled white vinegar.
- Mix everything thoroughly and set aside.

Prepare the Beef Caps:
- Rinse the beef caps in cold water.
- Turn them inside out and soak them in 2 quarts of cold water with salt and vinegar for 30 minutes.
- Drain and rinse the beef caps thoroughly, inside and out.

Assemble the Haggis:
- Divide the meat mixture into three parts.
- Fill the beef caps with the meat mixture, ensuring they are securely packed.
- Tie the ends of the beef caps with string.
- Two of the caps will be tied on one end, while the third piece will be tied on both ends.

Steam the Haggis:
- Prick the assembled haggis all over with corn holders or a sharp fork.
- Place the haggis in a steamer and steam for 80 minutes.

- Once steamed, serve the haggis sliced, accompanied by beef or lamb gravy.
