Instructions

Step 1: Prepare the dough

  1. Begin by dissolving the salt in lukewarm milk (1-2 minutes). In a separate large mixing bowl, sift the Manitoba flour and add the dry yeast.
  2. Add the honey, followed by the olive oil and grated lemon zest. Mix everything together by hand until combined.
  3. Once the dough begins to come together, transfer it to a lightly oiled work surface and knead until it becomes smooth and soft. If the dough feels dry, add a little more olive oil to achieve the right consistency.
  4. Shape the dough into a ball and place it in a lightly oiled bowl. Cover with plastic wrap and let it rise for at least 3 hours in a warm environment (such as a switched-off oven with the light on) until it has doubled in size.

Step 2: Prepare the custard

  1. While the dough is rising, prepare the milk custard. In a small saucepan, heat the whole milk. Slice the vanilla bean in half lengthwise and scrape the seeds into the milk. Add the bean itself to the pan as well.
  2. Stir with a whisk and bring the milk to a gentle simmer. Once the milk begins to warm, add the sugar and honey. Stir occasionally, allowing the mixture to thicken.
  3. Once the custard reaches a thick consistency, remove the vanilla bean. Set the custard aside to cool, and once it is cool enough, roll it out into a 34 cm diameter circle. You can do this on a clean surface, ensuring the edges remain slightly elevated for now.
  4. Prick the base of the dough with a fork to prevent it from rising unevenly during baking.

Step 3: Assemble the pizza

  1. Spread a generous layer of strawberry jam evenly across the base of the custard, smoothing it out with the back of a spoon.
  2. Gently fold the edges of the dough inward, creating a rustic crust. Press down lightly with your fingers to secure the edges.
  3. Place the sweet pizza on a baking tray lined with parchment paper, and bake in a preheated static oven at 180ยฐC (or 160ยฐC for fan ovens) for approximately 30 minutes. The crust should be golden and crispy.

  1. While the pizza is baking, whip the heavy cream until it forms soft peaks. Cover and set it aside in the fridge.

  3. Remove the leaves from the strawberries and slice them into quarters.
  4. Once the pizza has cooled, arrange the fresh fruit beautifully over the top of the sweet pizza. Place the peach slices, apple sticks, strawberries, and blueberries in a decorative pattern.
  5. Finally, garnish the pizza with fresh mint leaves to mimic basil leaves.
