Instructions
Step 1: Prepare the dough
- Begin by dissolving the salt in lukewarm milk (1-2 minutes). In a separate large mixing bowl, sift the Manitoba flour and add the dry yeast.
- Add the honey, followed by the olive oil and grated lemon zest. Mix everything together by hand until combined.
- Once the dough begins to come together, transfer it to a lightly oiled work surface and knead until it becomes smooth and soft. If the dough feels dry, add a little more olive oil to achieve the right consistency.
- Shape the dough into a ball and place it in a lightly oiled bowl. Cover with plastic wrap and let it rise for at least 3 hours in a warm environment (such as a switched-off oven with the light on) until it has doubled in size.
Step 2: Prepare the custard

- While the dough is rising, prepare the milk custard. In a small saucepan, heat the whole milk. Slice the vanilla bean in half lengthwise and scrape the seeds into the milk. Add the bean itself to the pan as well.
