Ingredients:

1 Egg
2 tablespoons Fresh lemon juice
3 – 4 Granny Smith apples, peeled and diced
2 Zucchinis, grated
2 Carrots, grated
2 tablespoons Walnuts, chopped
2 tablespoons Pecans, chopped
1/2 cup Raisins
1/2 cup Brown sugar
1/4 cup All-purpose flour
1 1/2 teaspoons Ground cinnamon
1/4 teaspoon Nutmeg, freshly grated
1/4 teaspoon Ground cloves
1/4 teaspoon Salt
1 tablespoon Fresh lemon juice
1 Egg, for glaze
1 tablespoon Water, for glaze

Instructions:

Making the Pie Crust:

  1. Combine Flour and Salt: In a large mixing bowl or food processor, combine the all-purpose flour and salt.
  2. Incorporate Butter: Process or cut in the unsalted butter until the mixture resembles coarse crumbs. If using a food processor, transfer the mixture to a large bowl.
  3. Prepare Wet Ingredients: In a small bowl, whisk together the egg, fresh lemon juice, and 3 tablespoons of ice water.
  4. Mix Wet and Dry Ingredients: Drizzle the egg mixture over the crumbly flour mixture. Use a fork to mix until the pastry holds together in a ball, adding more ice water if needed.
