Description: This delightful omelet, a cherished favorite of my husband, brings together the sweet and tangy flavors of fresh strawberries and bananas. Itโs a breakfast treat that shines when strawberries are at their peak freshness. The combination of fruit and eggs is a harmonious fusion that makes for an irresistible morning meal. Perfect for a quick yet special breakfast, this dish is sure to bring a smile to your face!
Ingredients:
- 1 cup fresh strawberries, hulled and sliced
- 1 banana, peeled and sliced
- 1 1/2 tablespoons granulated sugar
- 1/4 teaspoon lemon zest (rind of 1 lemon)
- 1 tablespoon fresh lemon juice
- 1/4 cup egg substitute
- 2 large eggs
- 1/4 teaspoon salt
- 2 tablespoons butter or margarine, divided
Instructions:
-
Prepare the Fruit Mixture:
- In a medium-sized bowl, combine the fresh strawberries and banana slices. Sprinkle the granulated sugar over the fruit, then add the lemon zest and fresh lemon juice. Gently toss the mixture to coat the fruit evenly with the sugar and lemon. Cover the bowl and let it stand at room temperature for about 15 minutes. This resting time allows the fruit to macerate, enhancing its natural sweetness and creating a delicious syrupy glaze.
-
Mix the Eggs:
- While the fruit is resting, crack the eggs into a small bowl. Add the salt and beat the eggs with a fork until well combined. If you’re using egg substitute, simply mix it with the salt until fully blended.
-
Cook the Omelets:
- Heat 1 tablespoon of butter or margarine in a non-stick skillet over medium heat. Once the butter is melted and bubbly, pour in half of the egg mixture, about 1/2 cup. Allow the eggs to cook undisturbed for a few seconds until they begin to set at the edges.
- Using the back of a pancake turner or spatula, gently push the cooked portions from the edges toward the center, allowing the uncooked portions to flow underneath. Slide the skillet back and forth over the heat to keep the egg mixture moving and prevent sticking.
- When the top of the omelet is still moist and creamy, spoon 1/2 cup of the fruit mixture over half of the omelet. Fold the omelet in half with the pancake turner and carefully slide it onto a plate. Keep it warm while you cook the second omelet.
-
Repeat the Process:
- For the second omelet, heat the remaining tablespoon of butter or margarine in the skillet. Pour in the remaining egg mixture and repeat the cooking process as described above. Once the omelet is ready, top it with the remaining fruit mixture.
-
Serve and Enjoy:
- Serve the fresh strawberry banana omelets warm, garnished with any remaining fruit mixture on top. This dish is perfect on its own or can be paired with a light fruit salad for a delightful brunch experience.
