In honor of this revered leader, Sai and I celebrate his legacy and reflect on his teachings. As a tribute to his principles of simplicity and harmony, I’ve prepared this delectable sweet rice to conclude our dinner tonight, a dish cherished by my family. May his soul rest in peace. Ingredients:

Quantity Ingredient
1 cup Basmati rice
4 cups Water
4 Cinnamon sticks
2-3 cups Sugar
1 tbsp Ghee
1/2 tsp Salt
1 cup Warm water
1/2-1 tsp Cardamom powder
1 tsp Saffron strands
4-5 tbsp Raisins
4-5 tbsp Pistachios
1 cup Pineapple

Instructions:

  1. Prepare Rice:

    • Pour 4 cups of water and 1/2 tsp of salt into a skillet.
    • Add cinnamon sticks.
    • Bring to a boil.
    • Lower the flame, add rice, and stir well.
    • Parboil the rice until half-cooked.
    • Strain well and set aside.
  2. Prepare Sweet Mixture:

    • In a pot, heat ghee over medium flame.
    • Add raisins, pistachios, and almonds.
    • Stir-fry for 2 minutes.
    • Add sugar, food color, pineapple essence, and warm water.
    • Stir until the sugar dissolves.
    • Add saffron and 1/2 to 1 tsp of cardamom powder.
  3. Combine Ingredients:

    • Mix in the strained rice until well incorporated.
    • Cover the pot with a lid.
  4. Cook Rice:

    • Cook on simmer for 10-15 minutes, stirring every 5 minutes to prevent sticking, until the rice is dry and fluffy. Your kitchen will be filled with delightful aromas during this process!
  5. Serve:

    • Transfer the sweet rice to a serving tray.
    • Garnish with pineapple slices if desired.
