Instructions

Preparing the Ingredients

  1. Preheat the Oven: Begin by preheating your oven to 180 degrees Celsius (350 degrees Fahrenheit).

  2. Prepare the Eggplant: Slice the brinjal (eggplant) into thin circles and sprinkle them with a teaspoon of salt. Let them sit for about ten minutes to draw out excess moisture. After ten minutes, press the slices between your palms to squeeze out the water. Brush or rub the eggplant slices with olive oil, then place them in the preheated oven for about ten minutes, or until they change color and soften. Remove from the oven and set aside.

  3. Sauté the Mushrooms: If using button mushrooms, quarter them and sauté in a teaspoon of olive oil over medium heat until slightly tender, approximately 2 minutes. Set aside.

Cooking the Lasagna

  1. Prepare the Pasta: In a large pot, bring salted water to a boil. Add the lasagna sheets and cook until al dente, approximately 8 to 10 minutes. Drain the sheets and drizzle a bit of olive oil over them to prevent sticking.
