Instructions

To prepare Garganelli with Squid Ragù and Peas, start by cleaning the squid. Rinse them under cold running water, then separate the tentacles from the body. Set both aside for later use.

Next, finely chop the shallots. In a large, non-stick frying pan, heat the olive oil over medium heat. Once the oil is warm, add the chopped shallots and cook, stirring occasionally, until they soften and become translucent, about 3-4 minutes.

Add the cleaned squid to the pan, season with salt and pepper, and cook for a few minutes until the squid starts to release its juices. Once the squid is cooked through, pour in the white wine, allowing it to evaporate and infuse the dish with flavor. Stir the ingredients together to combine.
