Tomato Basil Chicken Recipe

Tomato Basil Chicken is a flavorful, succulent chicken dish. Chicken breasts are pan-seared to golden perfection and then smothered in a light, refreshing homemade tomato basil sauce that is packed with the vibrant flavors of fresh basil leaves.

Ingredients:

For the Chicken:

  • 2 Chicken breasts
  • 2 teaspoons Mixed Herbs (Dried)
  • 3 tablespoons Lemon juice
  • 2 teaspoons Extra Virgin Olive Oil
  • Salt, to taste
  • 1 sprig Basil leaves, finely chopped

For the Tomato Basil Sauce:

  • 2 tablespoons Extra Virgin Olive Oil
  • 3 cups Homemade tomato puree
  • 1/4 cup Basil leaves, fresh and roughly torn
  • 1 Onion, finely chopped
  • 10 cloves Garlic, finely chopped
  • 1 tablespoon Mixed Herbs (Dried)
  • 1 teaspoon Red Chilli powder
  • Salt, to taste
  • Sugar, to taste

Prep Time: 15 minutes
Cook Time: 30 minutes

Instructions:

  1. Prepare the Chicken:
    Wash and clean the chicken breasts thoroughly. In a bowl, combine the chicken with mixed herbs, lemon juice, olive oil, and salt. Mix well to coat the chicken evenly.

  2. Pan-Seer the Chicken:
    Heat a skillet on medium-high heat and add the marinated chicken pieces. Cook for about 1 minute on each side until lightly browned and almost cooked through. Remove from the skillet and set aside.

  3. Make the Tomato Basil Sauce:
    In the same skillet, add the extra virgin olive oil and heat it over medium. Add the chopped onions and garlic, cooking until softened and fragrant. Stir in the mixed herbs, red chilli powder, and salt. Add the homemade tomato puree, fresh basil leaves, and a pinch of sugar, mixing everything together. Simmer for about 10 minutes until the sauce thickens and the flavors meld.

  4. Combine:
    Return the seared chicken to the skillet and coat it with the tomato basil sauce. Let it simmer for an additional 10 minutes, allowing the chicken to absorb the flavors of the sauce.

  5. Serve:
    Garnish with additional basil leaves if desired and serve hot. Enjoy this wholesome, high-protein dish that’s packed with fresh flavors and aromatic herbs!
