Ingredients:
- 1 Beetroot (peeled and chopped)
- 3 cups Water
- Salt (to taste)
- 1 pinch Black Pepper Powder
- 1 tsp Cumin Seeds
- 1 tbsp Coriander Seeds
- 4 Dried Red Chilies
- 4 Garlic Cloves (with skin)
- 1 tbsp Fresh Coriander Leaves (chopped)
- A few Curry Leaves
- 1 tbsp Oil
- 1 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- 1 Dried Red Chili
- A pinch of Asafoetida (Hing)
- Fresh Coriander Leaves (for garnish)

Instructions:

Start by washing, peeling, and chopping the beetroot. Place the chopped beetroot in a pressure cooker along with water (adjust according to your preference). Close the lid and cook for 2 whistles. Once done, turn off the heat and let the pressure release naturally.

In a blender, combine the following spices and ingredients: black pepper powder, cumin seeds, coriander seeds, dried red chilies, and garlic. Grind them into a fine paste.

Heat oil in a pan. Add the ground spice paste, beetroot, and its cooking water to the pan. Let it cook on medium heat for 10 to 12 minutes, allowing it to come to a gentle boil.

Meanwhile, prepare the tempering. Heat ghee in a separate small pan. Add mustard seeds, cumin seeds, dried red chili, and curry leaves. Let them sizzle for 15 seconds.

Pour the tempering into the rasam. Add a squeeze of fresh lemon juice and garnish with chopped fresh coriander leaves.
