- 200g boneless chicken
- 12 garlic cloves
- 2 ½ cups cooked rice
- Olive oil, as required
- ½ tsp crushed black pepper
- 3 green chilies, sliced thin and straight
- 1 ½ tsp soy sauce
- ½ tsp vinegar
- For burnt garlic:
- 9 garlic cloves, sliced
- 1 tsp olive oil
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Instructions:
- Heat oil in a wok or pan and add garlic. Cook for 1 minute.
- Add onions and cook until they turn soft.
- Add chicken pieces and stir well. Cook until the chicken is tender, ensuring not to overcook it.
- Once the chicken is cooked, add salt, green chilies, crushed black pepper, soy sauce, and vinegar. Stir and cook for an additional 1 minute.
- Add cooked rice to the pan, and mix well. (You can use leftover rice or let freshly cooked rice cool before adding.)
- Stir-fry for 1 minute, then turn off the heat.
- In a small pan, heat olive oil and add sliced garlic. Cook until the garlic turns golden brown.
- Add half of the burnt garlic to the rice and mix it in.
- Garnish the fried rice with the remaining burnt garlic.
