Instructions

  1. Prepare the Dal:

    • Wash the Arhar Dal (Toor Dal) thoroughly under running water.
    • Place the dal in a pressure cooker with enough water and cook for 3-4 whistles, or until the dal is soft and fully cooked. Set it aside to cool.
  2. Roast the Green Chilies:

    • In a pan, dry roast the green chilies (without oil) for a minute or two, just until they are lightly charred. Set them aside.
  3. Blend the Ingredients:

    • In a mixer jar, add the cooked dal, roasted green chilies, garlic cloves, tamarind paste, and salt. Blend everything together to form a smooth, thick paste.
  4. Temper the Dal:

    • Heat oil in a pan on medium heat.
    • Add mustard seeds (rai) and let them splutter for a few seconds.
    • Add curry leaves to the oil and let them sizzle for a moment.
    • Pour in the blended dal mixture and bring it to a boil, stirring occasionally.
  5. Simmer and Garnish:

    • Once the dal reaches the desired consistency (add a little water if you prefer a thinner consistency), lower the heat and simmer for another 5 minutes.
    • Turn off the heat and garnish with fresh coriander.
  6. Serve:

    • Serve the Garlic Dal hot with roti, rice, or as an accompaniment to a larger meal like lauki ki sabzi, boondi raita, or phulkas.
