Instructions
To prepare these Baked Gratinated Mushrooms, start by cleaning the mushrooms thoroughly. Trim the base of the stems where they are most dirty, then gently remove any excess soil by wiping the mushrooms with a damp cloth. If there’s significant soil, you may rinse the mushrooms under a quick stream of cold water, but avoid soaking them to prevent water absorption.

Slice the caps of the oyster mushrooms and cut the stems into thin slices. Leave the enoki mushrooms whole.
Next, crumble the stale bread by hand and blend it into fine crumbs using a food processor. Finely chop the fresh parsley and set aside.
Season the bread crumbs with chopped parsley, minced garlic, and the grated zest of half a lemon. Add the salt and mix well to combine all the ingredients.
Place the mushroom slices on a baking sheet lined with parchment paper, arranging them slightly overlapping each other. Drizzle 15 grams of extra virgin olive oil over the mushrooms, then evenly distribute the breadcrumb mixture over the top of the mushrooms.
Finish by drizzling the remaining 15 grams of olive oil over the breadcrumbs and topping with thin slices of lemon.
Bake in a preheated oven at 180°C (static mode) for 15 minutes. After this, switch to fan-assisted mode and continue baking for another 10 minutes at the same temperature.
Once done, remove from the oven and serve immediately while hot and delicious.
