Instructions

  1. Prepare the Shrimp: Begin by cleaning the shrimp. Remove the heads, peel off the shells, and carefully remove the intestinal vein (you can use a wooden skewer to help with this step). Once cleaned, set the shrimp aside.

  2. Prepare the Calamari: Next, clean the calamari by removing the head and thoroughly washing the inside under running water. Cut the calamari into rings about 8mm thick, and leave the tentacles whole.

  3. Prepare the Vegetables:

    • Wash the zucchini, cut off the ends, and slice it into 5mm rounds.
    • Wash and deseed the red bell pepper, then cut it into small cubes about 2 cm in size.
    • Peel and slice the red onion into 5mm thick rings.
  4. Make the Breadcrumbs: Take a slice of stale bread and cut it into chunks. Place the bread in a food processor and pulse until it forms breadcrumbs. Add lemon zest, marjoram, thyme, oregano, smoked paprika, and black pepper to the breadcrumbs. Pulse again to mix the ingredients thoroughly.

  5. Assemble the Dish: In a large bowl, combine the shrimp, calamari, and prepared vegetables. Drizzle with olive oil and season with salt to taste. Mix everything gently so the ingredients are well coated but not mashed.

  6. Gratinate: Preheat your oven to 200°C (392°F) in static mode. Transfer the seafood and vegetable mixture to an oven-safe baking dish. Sprinkle the breadcrumb mixture evenly over the top. Bake for 15 minutes.

  7. Finish the Dish: After 15 minutes, increase the oven temperature to 230°C (446°F) and bake for an additional 15 minutes. This will allow the breadcrumbs to become golden and crispy, and the ingredients to cook through.
