Ingredients:
- 5 cloves garlic
- 6-7 lb whole chicken
- 1 bunch fresh thyme
- 1 bunch fresh tarragon
- 1 lemon
- Coarse salt
- Ground black pepper
- 1/3 cup olive oil
- 1 baguette
Instructions:
-
Preheat Oven: Preheat your oven to 450ยฐF (230ยฐC). Lightly coat the bottom of your roasting pan with olive oil. Place garlic cloves in a single layer and roast for 20 minutes, stirring occasionally to prevent burning.
-
Prepare Chicken: While the garlic is roasting, wash and pat dry the whole chicken. Loosen the skin around the breasts and place 1/3 of the thyme and tarragon under the skin.
-
Season Chicken: Squeeze half of the lemon juice into the cavity of the chicken. Sprinkle coarse salt and pepper inside to season. Add another 1/3 of the herbs inside the cavity, and then fill the rest with as many roasted garlic cloves as will fit, setting the remainder aside.
-
Tie Chicken: Tie the legs together with cooking twine to secure the filling.
-
Season and Roast: Place the chicken in your roasting pan and surround it with the remaining herbs. Drizzle olive oil over the skin, massaging to coat evenly, then sprinkle with coarse salt and pepper. Roast the chicken for 1 hour and 10 minutes.
-
Add Garlic: After the initial roasting time, add the remaining roasted garlic to the pan around the chicken. Continue roasting for about 20 more minutes, until the chicken reaches an internal temperature of 170-175ยฐF (77-79ยฐC) in the thigh or until the juices run clear when pricked.
-
Check and Cover: If the chicken is browning too quickly, loosely cover it with foil for the remainder of the cooking time.
-
Rest: Once cooked, transfer the chicken to a cutting board and let it rest, covered with foil, for at least 15 minutes.
-
Skim Fat: While the chicken is resting, skim the fat from the pan juices.
-
Serve: Place the rested chicken on a platter surrounded by the roasted garlic cloves. Spoon the pan juices over the chicken for added flavor.
