Ingredients:

  • 1 lb ground beef
  • 1 lb ground turkey
  • 2 onions, chopped
  • 1/4 cup all-purpose flour
  • 1 tbsp chili powder
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp ground cumin
  • 1 tsp ground sage
  • 1 can (14.5 oz) stewed tomatoes
  • 1 clove garlic, minced
  • 1/2 cup margarine
  • 1/4 cup all-purpose flour
  • 1 can (14.5 oz) beef broth
  • 1 can (8 oz) tomato sauce
  • 2 tsp chili powder
  • 2 tsp ground cumin
  • 1 tsp ground sage
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 10 flour tortillas
  • 2 cups shredded cheddar cheese

Instructions:

  1. In a large saucepan, cook the ground beef and chopped onion over medium heat until the meat is browned and the onions are tender. Drain any excess grease.
  2. Add the all-purpose flour, chili powder, salt, garlic powder, ground cumin, and ground sage to the saucepan. Mix well to combine all the ingredients.
  3. Stir in the stewed tomatoes and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes, allowing the flavors to meld together.
  4. In another saucepan, sauté the minced garlic in margarine until fragrant and golden brown.
  5. Stir in the all-purpose flour until it’s well blended with the garlic-infused margarine.
  6. Gradually pour in the beef broth, stirring constantly to prevent lumps from forming. Bring the mixture to a boil and cook for an additional 2 minutes, or until it thickens and becomes bubbly.
  7. Stir in the tomato sauce, chili powder, ground cumin, ground sage, salt, and garlic powder. Heat the sauce through, ensuring all the flavors are well incorporated.
  8. Preheat your oven to 350°F (175°C).
  9. Pour 1 1/2 cups of the prepared sauce into a 13×9 inch baking pan, spreading it evenly across the bottom.
  10. Spoon about 1/4 cup of the beef mixture down the center of each flour tortilla. Top the beef with 1-2 tablespoons of shredded cheddar cheese.
  11. Roll up each tortilla tightly and place them seam side-down into the baking dish, on top of the sauce.
  12. Repeat the process with the remaining tortillas, arranging them snugly in the baking dish.
  13. Pour the remaining sauce over the assembled enchiladas, ensuring they are generously coated.
  14. Cover the baking dish with aluminum foil and bake in the preheated oven for 30-35 minutes, or until the enchiladas are heated through.
  15. Remove the foil and sprinkle the remaining shredded cheddar cheese over the top of the enchiladas.
  16. Return the uncovered dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  17. Once done, remove the enchiladas from the oven and let them cool slightly before serving.
