Recipe Category: Roast Beef
Keywords: Meat, Easy, Inexpensive
Description:
Don’t let the abundance of garlic intimidate you! Through the slow cooking process, the garlic mellows, infusing the meat with a delightful flavor. This recipe is a personal favorite, and I’m confident it will become one of yours too. Keep in mind that different beer brands impart varying levels of sweetness, ranging from bitter to malty. Adjust the sugar content accordingly until you’re familiar with the taste profile of your chosen beer, as most beers contribute some sweetness regardless.

Instructions:
-
In a large skillet, heat 1 tablespoon of oil over medium-high heat. Brown the chuck roast on both sides, seasoning it with salt and pepper. Once browned, transfer the roast to a platter and keep it warm.
-
Add the remaining tablespoon of oil to the skillet. Add the chopped onions and cook until they start to wilt. Then, add the minced garlic and continue cooking until the onions are tender, which should take a few minutes more.
-
Dissolve the beef bouillon cubes in hot water. Pour this mixture into the skillet along with the lager beer, brown sugar, Dijon mustard, and cider vinegar. Stir well to combine.
-
Transfer the mixture from the skillet into the bottom of the crock pot.
-
Place the browned chuck roast on top of the liquid in the crock pot. If necessary, cut the roast into pieces to ensure it lays flat.
-
Set the crock pot to low heat and cook for 7 to 8 hours, allowing the flavors to meld and the meat to become tender.
-
Once the cooking time is complete, remove the roast from the crock pot and transfer the liquid from the crock pot into a pan on the stove. Heat the liquid to a boil.
-
In a small bowl, mix the cornstarch with water to create a slurry. Gradually add the slurry to the boiling liquid, stirring constantly, until the gravy thickens to your desired consistency.
-
Serve the gravy over the sliced roast, or alongside potatoes or noodles for a comforting meal.
With its tender, flavorful meat and rich, savory gravy, this Drunken Garlic Crock Pot Roast is sure to become a staple in your recipe repertoire. Enjoy the hearty goodness of this dish, perfect for any occasion!
