Instructions:

- Preheat your oven to 375Β°F (190Β°C).

- In a small bowl, mix together olive oil, dried rosemary, and dried thyme.

- Rub the oil and herb mixture all over the outside of the chicken.

- Place the onion, celery, and lemon inside the cavity of the chicken.

- Pour the white wine and chicken broth into the dutch oven.

- Once boiling, transfer it to the preheated oven and bake, covered, for 25 minutes.

- Uncover the chicken and bake for an additional 55-60 minutes, or until the chicken is golden brown and cooked through.

- Skim as much fat as possible from the liquid in the pot.
- Squeeze out 6 cloves of garlic into a small bowl, mash them into a paste, then whisk in about 1/4 cup of the cooking liquid.
- Stir in the fresh parsley and salt.
