Instructions:

  1. Prepare Roasted Garlic:

    • Preheat your oven to 400Β°F (200Β°C).
    • Take the garlic bulbs and slice off the tops to expose the cloves.
    • Place them on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper.
    • Roast in the oven for about 30-40 minutes, until the cloves are soft and golden brown. Allow them to cool.
  2. Prepare Onions:

    • While the garlic is roasting, prepare the onions.
    • Peel and slice the onions thinly.
  3. Cook Onions:

    • In a large skillet over medium heat, coat with cooking spray.
    • Add the sliced onions and cover with a lid.
    • Cook, stirring occasionally, until the onions are softened and translucent, about 15 minutes.
  4. Caramelize Onions:

    • Add the sugar and brown sugar to the skillet with the onions.
    • Recover the skillet and continue cooking until the onions are golden brown, about 20-30 minutes.
  5. Add Water:

    • Pour in 1/4 cup of water and stir the mixture.
  6. Darken Onions:

    • Cover the skillet again and cook the onions until they turn a deep, dark brown, about another 20-30 minutes.
  7. Add Flavor:

    • Stir in the balsamic vinegar and the roasted garlic cloves.
  8. Finish Cooking:

    • Add another 1/4 cup of water to the skillet and continue cooking until the liquid has been absorbed, about 10 minutes.
  9. Cool and Store:

    • Transfer the onion jam to a bowl and allow it to cool completely.
    • Once cooled, store the jam in an airtight container in the refrigerator for up to 1 week.
