Garlic and Oregano Stove Top Chicken

Ingredients

  • 1 garlic clove, minced
  • ¼ teaspoon salt
  • 4 tablespoons butter, divided

  • 2 chicken breasts, boneless and skinless
  • 1 – 2 tablespoons olive oil

Instructions

  1. Prepare the Garlic-Oregano Butter
    In a small bowl, combine the minced garlic, salt, 2 tablespoons of butter, dried oregano, and cayenne pepper. Mix well until the ingredients are thoroughly blended.

  2. Prepare the Chicken Breasts
    Using a sharp knife, cut a deep pocket into each chicken breast, about 2 inches long. Be careful not to cut all the way through the breast.

  3. Stuff the Chicken
    Take 1 tablespoon of the garlic-oregano butter mixture and carefully stuff it into each pocket of the chicken breasts. Press the butter mixture down into the pocket to ensure it’s well distributed.

  4. Heat the Skillet
    In a large skillet, heat 1 – 2 tablespoons of olive oil over medium heat.

  5. Cook the Chicken
    Place the chicken breasts in the skillet, skin side down. Cook uncovered for about 10 minutes or until the chicken is well-browned.

  6. Finish Cooking
    Turn the chicken breasts over and cover the skillet with a lid. Continue cooking for an additional 10 to 15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

  7. Add the Remaining Butter
    Once the chicken is cooked, uncover the skillet and spread the remaining garlic-oregano butter over the chicken breasts. Turn the chicken once more so that the skin side is down.

  8. Brown the Chicken
    Cover the skillet again and cook for an additional 5 to 10 minutes, or until the skin is crispy and the chicken is golden brown.

  9. Serve and Enjoy
