Instructions:

  1. Prepare the onions: Begin by peeling the red onions, removing just the outer layer and any root ends. Rinse them under cold water to remove any remaining skin or dirt.

  2. Blanch the onions: Bring a pot of water to a boil and add a tablespoon of white wine vinegar. Once boiling, add the onions and let them cook for about 10 minutes until slightly softened.

  3. Prep the tomatoes: While the onions are boiling, wash and dry the cherry tomatoes. Cut them into wedges and set aside.

  4. Drain and cool the onions: Once the onions are done, drain them and set aside to cool slightly. When they are cool enough to handle, slice them into wedges.

  5. Assemble the dish: Preheat your oven to 180°C (350°F) with the static heat setting. In a baking dish, spread a layer of breadcrumbs and grated Parmesan, followed by a drizzle of extra virgin olive oil.

  6. Layer the onions and toppings: Arrange the onion wedges in the dish. Add the cherry tomato wedges, capers, and black olives on top. Season with salt and black pepper to taste.
