Pan-Seared Mushrooms and Radicchio

Ingredients:

Champignon mushrooms 500g
Radicchio 300g
Extra virgin olive oil 3 tbsp
Garlic 1 clove
Salt To taste
Black pepper To taste
Red wine 100ml

Instructions:

  1. Prepare the Radicchio: Start by carefully peeling the leaves of the radicchio. Rinse them thoroughly under running water to remove any dirt or residue. Once washed, chop the leaves into smaller pieces, setting them aside for later use.

  2. Clean the Mushrooms: Next, clean the champignon mushrooms. Trim the base of each mushroom to remove any tough stems, and gently wipe off any dirt using a damp cloth. Slice the mushrooms into thin, even pieces and set them aside.

  3. Sauté the Garlic: In a large pan, heat the extra virgin olive oil over medium heat. Once the oil is hot, add the garlic clove and sauté it for a couple of minutes until it becomes fragrant and golden. Be sure not to let the garlic burn.

  4. Cook the Radicchio: Remove the garlic from the pan and add the chopped radicchio. Stir the radicchio to ensure it’s coated with the olive oil, then season with salt and freshly ground black pepper.

  5. Deglaze with Wine: Pour in the red wine and let it simmer for a few minutes to allow the flavors to meld. This step will also help deglaze the pan, releasing any caramelized bits from the bottom of the pan that add extra flavor.

  6. Add the Mushrooms: Once the wine has simmered down slightly, add the sliced mushrooms to the pan. Stir everything together and cover the pan with a lid. Let the mixture cook for about 2 minutes, allowing the mushrooms to release their juices and the flavors to combine.

  7. Serve: After the mushrooms and radicchio have cooked together, give everything a final stir. Taste and adjust the seasoning with more salt or pepper if needed. The dish is now ready to be served!
