Recipe Name: Sauteed Zucchini (Zucchine Trifolate)
Category: Side Dishes
Servings: 4

Ingredients:

Ingredient Quantity
Zucchini 800g
Garlic 2 cloves
Fresh Parsley 2 tablespoons
Fine Salt to taste
Black Pepper to taste
Extra Virgin Olive Oil 40g

Instructions:

  1. Begin by thoroughly washing the zucchinis under cold water, removing the ends, and then pat them dry with a kitchen towel. Once dry, slice the zucchinis into thin rounds.
  2. Peel and finely chop the garlic cloves, then prepare the fresh parsley by chopping it into small pieces.
  3. Heat the extra virgin olive oil in a large skillet over medium heat. Add the chopped garlic and sauté until it turns golden and fragrant. Be careful not to burn it.
  4. Add the sliced zucchinis to the skillet, stirring them gently to coat with the oil and garlic mixture. Season with salt and black pepper to taste.
  5. Cover the skillet with a lid and cook the zucchini for about 8-10 minutes, stirring occasionally to ensure even cooking. The zucchinis should become tender and slightly caramelized.
  6. Once cooked, sprinkle the zucchini with the freshly chopped parsley, mixing it in to evenly distribute.
  7. Serve hot as a side dish to complement your main course.

Tips:

  • For an extra layer of flavor, you can add a splash of lemon juice or a sprinkle of Parmesan cheese just before serving.
  • If you prefer a softer texture, cook the zucchinis a bit longer, but be sure to stir occasionally to avoid burning.
  • This dish pairs wonderfully with grilled meats or as part of a Mediterranean-style meal.

Enjoy your delicious and healthy Sauteed Zucchini!
