Ingredients:

Quantity Ingredient
1 Garlic
1 Boiling water
2 Beef broth
1/2 Chicken broth
1/2 Water
1/2 Dry white wine
1 1/2 Half and half milk
1/4 Dried thyme
1 Cayenne
Butter
4 Gruyere cheese

Instructions:

  1. Prepare Garlic:

    • Remove all the cloves of garlic from the head.
    • Heat a small saucepan to boiling with a cup of water.
    • Add the cloves of garlic and simmer for about 1 minute.
    • Drain and peel the softened garlic cloves; cut each clove in half.
  2. Simmer Garlic:

    • In a saucepan, combine beef broth and the prepared garlic cloves.
    • Cover and simmer for 10 minutes until garlic is soft.
    • Remove half of the garlic cloves and set aside.
  3. Prepare Soup Base:

    • To the saucepan, add chicken broth, water, dry white wine, half and half, dried thyme (crushed), and cayenne.
    • Heat to a low simmer for 5 minutes.
  4. Blend Soup:

    • Using an immersion blender or regular blender, puree the soup until smooth.
    • Season to taste with salt and freshly ground pepper.
    • Set aside and keep warm.
  5. Prepare Cheesy Garlic Toast:

    • Toast bread on one side under the broiler.
    • Spread butter on the untoasted side of each slice.
    • Mash the reserved half of garlic cloves and spread over the buttered side of the bread.
    • Sprinkle shredded Gruyere cheese over the garlic.
  6. Broil Toast:

    • Broil the prepared toast until brown and bubbly, about 30 seconds. Watch closely to avoid burning.
  7. Serve:
