Instructions

Step 1: Soak and Cook Chickpeas
Begin by rinsing the chickpeas (Kabuli chana) twice to remove any impurities. Soak them in enough water for at least 8 hours, or ideally, overnight. The next day, drain the soaking water and transfer the chickpeas into a pressure cooker. Add 4 cups of water, a pinch of salt, and turmeric powder. Cook the chickpeas under high pressure for one whistle. After that, reduce the heat to low and let them simmer for 15 minutes. Once done, turn off the heat and allow the pressure to naturally release.

Step 2: Prepare the Spinach
While the chickpeas are cooking, wash the spinach leaves thoroughly under running water. If you’re using baby spinach, simply remove the stalks. For regular spinach, tear the leaves into smaller pieces, roughly in half or thirds.

Add the cooked chickpeas along with the water they were cooked in to the pan. Stir everything together and bring it to a gentle boil. Let the curry simmer for another 2 minutes to allow the flavors to meld together.

Step 6: Finish with Garam Masala
Sprinkle a pinch of garam masala powder over the curry and stir to combine. Turn off the heat and cover the pan, letting it rest for 10 minutes to allow the flavors to deepen.

Step 7: Serve
