Spinach Mushroom Stir Fry

This Continental Spinach & Mushroom Stir Fry is a quick and flavorful dish that can be served as a side to your main course. With lightly sautéed onions and garlic, combined with mushrooms and spinach, this dish pairs perfectly with grilled chicken or fish for a wholesome meal.

Ingredients:
- 400 grams Spinach, chopped
- 250 grams Button mushrooms, halved
- 1 Onion, sliced
- 4 cloves Garlic, finely chopped
- 1 teaspoon Whole Black Pepper Corns, coarsely pounded
- 1 teaspoon Cumin powder (Jeera)
- Salt, to taste
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Instructions:
- Heat oil in a flat saucepan over medium heat.
- Add the chopped garlic and onions to the pan, and sauté until the onions turn translucent.
- Once the onions soften, add the halved mushrooms and stir fry until the mushrooms start to release moisture.
- Add the chopped spinach to the pan, then sprinkle salt, pepper, and cumin powder. Mix well.
- Continue stir frying on medium heat until the spinach wilts and releases moisture. You can leave some moisture in the stir fry for added flavor.
- Let the spinach cook for a minute or two, and then check the seasoning. Adjust salt and spices according to your taste.
- Once done, remove from heat and transfer to a serving bowl.
- Serve hot alongside grilled lemon chicken and herbed rice for a complete and satisfying meal.
