Instructions

Step 1: Cook the Dal

  1. Start by thoroughly washing the Arhar dal (Split Toor Dal). In a pressure cooker, combine the washed dal, thinly sliced onion, grated ginger, turmeric powder, salt, chopped tomato, and a cinnamon stick.
  2. Add 2-1/2 cups of water to the cooker and secure the lid tightly. Cook on high heat until you hear three whistles from the pressure cooker.
  3. Once the initial three whistles are done, reduce the heat to low and allow the dal to simmer for another 3-4 minutes. Then, turn off the heat and let the pressure release naturally.
  4. After the pressure has released, carefully open the cooker. Give the dal a good whisk to break down the lentils. Check the seasoning and adjust salt and spices according to your taste. If you prefer a thinner consistency, you can add a little water at this stage.
  5. Stir in the freshly squeezed lemon juice and chopped coriander leaves to bring in some freshness and balance the flavors. Set aside the dal in a serving bowl.

Step 2: Prepare the Tadka (Seasoning)

  1. In a separate tadka pan, heat the ghee over medium heat. Once the ghee is hot, add the cumin seeds and dry red chilies.
  2. Allow the cumin seeds to splutter and the red chilies to infuse the oil with their heat. Next, add the chopped garlic to the pan.
  3. Roast the garlic until it turns golden brown and releases a rich, fragrant aroma. Be careful not to burn the garlic, as it will turn bitter.
  4. Once the garlic is golden, pour the entire tadka into the cooked dal. Stir to mix the tadka thoroughly with the dal.

Step 3: Serve and Enjoy

  • Serve the Arhar Dal with Garlic Tadka immediately with steamed rice or parathas. For an added touch, pair it with a side of Aloo Simla Mirch ki Sabzi (potato and bell pepper curry) and a refreshing Moong Sprouts Salad for a complete meal.
