Ingredients:

  • 1/4 cup Arhar dal (Split Toor Dal)
  • 1/4 cup Yellow Moong Dal (Split)
  • 1/4 cup Masoor Dal (Whole)
  • 1-inch piece Ginger, grated
  • 2 Green Chilies, slit
  • 1-inch Cinnamon Stick (Dalchini)
  • 1 Bay Leaf (Tej Patta)
  • 2 Tomatoes, finely chopped
  • 250 grams Kaddu (Parangikai/Pumpkin), peeled and chopped
  • Salt, to taste
  • Oil, for cooking
  • 1 teaspoon Turmeric Powder (Haldi)

For the Tadka:

  • 1 teaspoon Ghee
  • 1 teaspoon Cumin Seeds (Jeera)
  • 4 cloves Garlic, chopped
  • 2 Dry Red Chilies

Preparation Time: 15 minutes
Cooking Time: 30 minutes

Instructions:

  1. Cook the Dal:

    • Begin by washing the dals thoroughly and preparing the other ingredients (grate ginger, slit the green chilies, chop the tomatoes and pumpkin).
    • In a pressure cooker, combine the Arhar dal, Yellow Moong Dal, Masoor Dal, ginger, green chilies, cinnamon stick, bay leaf, tomatoes, and pumpkin. Add 2 ½ cups of water and salt to taste.
    • Close the lid of the pressure cooker and cook for 2-3 whistles on medium heat. After the whistles, reduce the heat to low and simmer for another 2 minutes. Turn off the heat and allow the pressure to release naturally.
    • Once the pressure is released, open the cooker, stir the dal, and adjust the seasoning if necessary. Transfer the dal to a serving bowl.
  2. Prepare the Tadka:

    • For the garlic tadka, heat ghee in a small pan over medium heat. Add cumin seeds, garlic, and dry red chilies. Sauté for a few seconds until the garlic turns golden and aromatic.
    • Pour the prepared tadka over the cooked dal and stir well to combine.
  3. Serve:

    • Serve the Pumpkin Dal with Garlic Tadka hot, accompanied by steamed rice, papad, and achaar for a wholesome and satisfying dinner.

Enjoy this flavorful and healthy Pumpkin Dal with Garlic Tadka, perfect for a quick weeknight meal!
