Chicken Sausage Roll with Gedi Leaves

Ingredients:

  • 1 large sausage
  • 1 chicken breast fillet
  • 4 sheets of gedi leaves (or spinach as an alternative)
  • ยฝ teaspoon oyster sauce
  • Salt and pepper, to taste
  • Butter, for frying
  • Mayonnaise, for serving
  • String for tying (use mattress thread or similar)

Instructions:

  1. Prepare the Chicken Fillet:
    Begin by flattening the chicken breast fillet. Use a meat mallet or rolling pin to pound the fillet until it is evenly flattened and widened. This will ensure that the chicken cooks evenly and wraps snugly around the sausage.

  2. Season the Chicken:
    Rub the flattened chicken fillet with oyster sauce, salt, and pepper. Allow the seasoning to marinate for about 3 minutes to ensure the flavors are well absorbed.

  3. Prepare the Gedi Leaves:
    Bring a pot of water to a boil and cook the gedi leaves (or spinach) for approximately 5 minutes. The gedi leaves have a texture similar to cassava leaves and require a longer cooking time to become tender. Once cooked, squeeze out any excess water from the leaves and slice them thinly.

  4. Assemble the Roll:
    Place the seasoned chicken fillet on a clean surface. Lay the sausage and thinly sliced gedi leaves in the center of the fillet. Carefully roll the chicken around the sausage and gedi leaves, ensuring it is tightly wrapped. Secure the roll by tying it with the string to maintain its shape during cooking.

  5. Cook the Roll:
    Heat a generous amount of butter in a frying pan over medium heat. Once the butter has melted and is bubbling, add the chicken roll. Cook the roll, turning occasionally, until the chicken is fully cooked and golden brown on all sides. This should take around 10-15 minutes depending on the thickness of the roll.

  6. Serve:
    Remove the chicken roll from the pan and let it rest for a few minutes before untieing the string. Slice into portions and serve with a dollop of mayonnaise and a side of fresh vegetables.
